Almond Butter Pecan Pot Cookies
I had a 20-hour bus trip ahead of me, and I wanted to be relaxed for the ride, so my friend and I took about a gram of Doox (20.54% THC) and made two-or-so Tablespoons of cannabutter. Doox, as described on The Farm’s website, is a “musky, skunky, earthy, pungent” hybrid of Chemdawg and Purple Cow that provides an “instant intense high, uplifting mentally with a strong body buzz.” I feel that to be a pretty accurate description. Since we only had a few grams of weed and wanted enough to smoke spliffs during the process, we decided to make a very small batch of cookies with whatever we had lying around.
I had noticed two jars of almond butter that hadn’t been touched, and my friend knew he had pecans, so Almond Butter Pecan Pot Cookies it would be.
We boiled 2-3 cups of water with a splash of olive oil and added roughly two Tablespoons of butter, making sure it didn’t burn. We turned the heat to low, then added our gram-or-so of ground marijuana and let the mixture simmer for three hours. We smoked three spliffs while waiting and suggest you do the same.
Since we didn’t have a cheesecloth to strain the cannabis out of the cannabutter, we used a tea strainer as a substitute. We figured the weed was ground up well enough that we wouldn’t mind eating it, but it worked surprisingly well. We put the water and butter mixture in the freezer for about an hour and then moved it to the fridge for the night.
Once the cannabutter solidifies and settles on the top of the water, you can strain the water out and start making your cookie batter. We used about 1/2 cup sugar, 1/4 cup almond butter, half a scrambled egg, about a 1/2 cup of flour, and a splash of vanilla and salt. Let that sit in the fridge for 30 minutes.
Then we preheated the oven to 375 degrees and greased a pan. We placed six, one-inch balls of cookie batter on the pan and waited about 8-10 minutes. The cookies looked and smelled great. The marijuana was not overpowering. And they tasted even better, but the effect was minimal. And I wasted it waiting for a bus that never came because the bus station was moved a mile out of Fort Collins and apparently Google didn’t realize that. I did get to hang with my buddy DJ Rain Coat and do some kiddy blow, though. I ended up waiting four hours in 40-degree weather before a local bus driver told me the bus stop had changed. I walked a mile to the Shell station that was the new stop and had to wait another six hours for the next northbound bus. At that moment I wished I would have taken the gram of blow DJ Rain Coat offered for the road before I left, but I had been drinking for six hours, having just visited New Belgium Brewery, Odell’s Brewery, and Equinox Brewing in Fort Collins before going to DJ Rain Coat’s for shots of whiskey and beer, and I was ready to sleep. I took a seat at the gas station and fell asleep with my head on the table.
The body high from the cookies was noticeable, but wasn’t exactly what we were looking for, as my friend confirmed the next day. I would suggest using an eighth of an ounce of marijuana per six cookies.
